This is the perfect topping for yoghurt bowls and smoothie bowls coming into summer. Many muesli recipes use a lot of added sweeteners and oils which can turn what should be a healthy food into the complete opposite! This recipe uses no oil and just a small amount of unrefined sweetener. It can also be packed into jars and gifted as DIY Christmas presents.
300 gm oats (use gluten free oats if necessary)
70 gm raw pecans, coarsely chopped
30 gm raw sunflower seeds
20 gm sesame seeds
zest of one orange
2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 teaspoon ground cardamom
1/4 teaspoon ground clove
40 gm raw honey (or brown rice syrup for fructose free or vegan)
60 gm dried figs (look for no added sugar and preservative free. Omit these altogether for fructose free), roughly chopped
Preheat the oven to 150C.
Combine the oats, pecans, seeds, zest and spices in a large bowl and stir to combine.
Heat the honey in the microwave for 10-15 seconds just until a runny consistency is achieved. Pour the honey over the dry ingredients and, working quickly, mix with a spoon so the honey coats the mixture.
Spread the mixture over two trays lined with baking paper and bake for 45-55 min until golden brown, rotating the trays halfway through.
Allow to cool, then stir through the figs.
