So sweet potato toast has definitely gone viral. Here’s a recipe of sorts to guide you if you’ve never tried it. It’s a wonderful wholefoods alternative to bread and a great way to get more vegetables into your diet.
1 sweet potato (the rounder and more uniform in shape the better)
Wash and scrub your sweet potato. Shave off the ends of the sweet potato so your slices will be flat on both sides (tying to waste as little potato as possible). Slice sweet potato lengthways into 1cm thick slices. Toast your slices 2-3 times until they are softened and browning around the edges.
For a savoury topping, spread hummus onto sweet potato, lay avocado slices on top and sprinkle with za’atar.
For a sweet topping, lay banana slices onto sweet potato, drizzle with tahini and raw honey and sprinkle with cinnamon and a touch of sea salt.
Sweet potato suits both sweet and savoury toppings so get creative!
